A lot people does not know how my dad actually use charcoal to roast chickens and pork. So this post is to show you how it is done. There were many methods to roast chickens, but this is the most common one that I know of here.
This is the roaster. It is about 5 feet high and 2 feet wide. It is made of stainless steel. As you can see, this roaster has been with my dad for many years. What'’s the stool for? My dad is a short man, so he needs a stool so that he can climb up can open up the top. He has to be careful, as the heavy hot cover may tilt in his grasp and burn his arm. It happened before and it is a nasty burn.
Hot...Hot...Hot....
The chickens are first marinated with my family'’s secret recipe spices and herbs (it'’s so secret even my mom doesn'’t knows it) before it is hooked on steel claws and hung around the roaster. Notice the charcoal burning in the center of the roaster. Chicken will be fully cooked in 20 min time.

Updates: My dad has moved from the place mentioned above. It is somewhere near there, opposite DHL office. The restaurant is called San Cheong Kei.
